This is one of my favorite go-to recipes for small dinner parties. It's super simple, super quick to make, and perfect for small get-togethers. And if you like it extra hot, just leave some jalapenos rib and seeds behind when deseeding the pepper (that's where all the heat is!) This is a semi-homemade recipe, you can find pimento cheese at any grocery store, so the amount of ingredients is small and can be scaled easily for larger parties. When I make these I like making them HOT... which means less people will eat them, which leaves more for me, hah! Promise I'm a good host otherwise!
Pimento Cheese (or any soft spreadable cheese)
Crumbled bacon (optional)
Cut jalapenos in half and de-seed. Rinse under the faucet to wash away any leftover seeds. Spoon in pimento cheese. Set oven to Broil.
Place jalapenos on tray or wire rack over tray. Note: If you place jalapenos directly on a metal tray, it will cook much faster than if you place the jalapenos on a wire rack.
If jalapenos are on metal tray leave in for 5-7 minutes. If jalapenos are on wire rack leave in for 10-15 minutes. Or until golden brown.
And voila! Delicious cheesy jalapenos!
